According to Eric, pesto can be used with just about anything – something the rest of Team-Expa have had several opportunities to try out – and agree! It’s like a little taste of Italy!
We use pesto as a sauce or a dip to go with grilled meat, fish (especially fish and vegetables wrapped in foil on the barbeque or in the oven), on bruschetta, as a dip for vegetables and of course, with pasta dishes.
Our recipe is as follows:
Mix together the basil, crushed garlic and pine nuts either in a food processer or with a mezzaluna chopping knife, or a pestle and mortar. Add the oil while you stir/run the food processor.
Stir in the parmesan cheese and season with salt and pepper.
